Food and Lifestyle Expert Laura McIntosh meets up with chef, Dana Jaffe, of Saddles Steakhouse In Sonoma. Together they create an appetizing three Potato Gratin dish using Russet potatoes.
Three Potato Gratin Recipe
Ingredients: 3 Each Russet Potatoes
3 Each Yams (Jewel of Garnet)
5 Each Red Potatoes of Kennebec
4 Cups Parmesan or Asiago Cheese
4 Cups Heavy Cream
Salt and Pepper, to taste
Directions Preheat oven to 325°F
Peel Potatoes (except Red)
Thinly slice (1/8 inch) into a bowl of cold water
Butter a baking dish
Place Potato slices on a clean kitchen towel to drain and pat dry
Layer Potatoes, Salt, Pepper and Cheese and top with Cream
Repeat until baking dish is full. Top with more Cheese.
Bake for approximately 1 hour until golden brown and bubbly and a knife can be inserted easily through the Potatoes.
