Six thousand years ago the Mayan and Aztec Indians considered corn the source of life, and the tamale a gift from the gods. Today, in the Hispanic community, where the preparation process is a social event for friends, family and neighbors, tamales are seen as nourishment for body and soul.

Now a California company is updating this tasty tradition for people who want a quick, easy and low fat way to take a bite out of history. Based in Chico, "Today's Traditions" has been creating vegetarian entrees for more than 20 years. While it's hard to say what the ancient Mayans would make of a meatless meal, they can rest assured that the tamale tradition is alive and well in Chico, California.
