From kiwi to quince, Frieda's, Incorporated of Orange County is the nation's leading marketer and distributor of specialty produce. The company was founded in 1962 by Frieda Caplan. Along with her daughters, the $24 million enterprise continuously searches for new fruits, vegetables and herbs.
We turned to Frieda when we wanted to find out what new produce may wind up on our grocery store shelves or at our farmers' markets. Company President and CEO Karen Caplan said she expects to see more of a fruit called a tamarillo. It's native to Central America. However, with California's growing Hispanic population we're beginning to see it grown here.
Karen took Pat McConahay into the company's kitchen to show her a simple, but tasty tamarillo ice cream topping.
Tamarillo Ice Cream Topping
Try the sauce over hot cakes, waffles, puddings or ice cream.
- 6 peeled tamarillos
- 2 tbsp. orange juice
- ½ cup sugar
- 1 tsp. grated orange peel
- 1 quart vanilla or peach ice cream
To peel tamarillos, pour boiling water over fruit; remove skins and stems. Chop fruit; place it in blender or food processor container. Add orange juice, sugar and orange peel. Cover and process until pureed. Scoop ice cream into serving dishes; spoon sauce over ice cream. To store remaining sauce, cover and refrigerate up to one week.
Makes 2 ½ cups sauce.
